VINEGRET
Ingredients: 3 boiled potatoes, 1 boiled carrot, a bunch of
spring onion, 2 table spoons of tinned peas, 1 boiled beetroot, 1 pickled cucumber, grated
pepper, a pinch of salt.
Directions: cut all the vegetable into thin straw, mix all of
them. Add salt and pepper. Season with sunflower oil or mayonnaise.
Note: Here in Russia we use in this salad cucumbers that were preserved without
adding vinegar but specially salted water with spices.
