Gooseberry Fool

My name is Lauren Won and I am a 6th grader at Manoa Elementary School. I am 11 years old and I live in Hawaii. My recipe is called Gooseberry Fool and it is a recipe from England.

Ingredients ~

1 pound of gooseberries (raspberries, blackberries, or apples),
2 tablespoons of water,
half a cup of sugar and half a pint of cream

Directions ~

1. Remove both ends of the gooseberries. If you use raspberries or blackberries remove the stems. If you use apples, the apple must be peeled , cored and cut into pieces.

2. Put the gooseberries in a saucepan with the water and sugar. Simmer over low heat. Stir it every once in a while until the gooseberries are tender. It takes about 20 minutes.

3. Use the back of the spoon to rub the gooseberries through a sieve into a bowl and let it cool.

4. Use an eggbeater or an electric mixer, to whip cream until stiff peaks form.

5. Fold the cream into the gooseberry puree.

6. Pour into individual dessert dishes and chill at least an hour before serving.

Summary (Cultural Background) ~

Gooseberry Fool has been a favorite dessert in England for 400 years. Legend has it that people who eat this delicious dessert acted like fools. In Northamptonshire (northwest of London), it is said that children would eat as much Gooseberry Fool as they could, run outside, roll down a hill, and then start eating all over again! Another claim is that Gooseberry Fool is so simple to prepare that any fool can make it. Gooseberry Fool is easy to make, using only fruit, sugar and cream. If fresh gooseberries are not available, canned gooseberries may be substituted. Kiwi fruit, sometimes called Chinese gooseberry, can also be used. Cranberries, apples, rhuarb, red currants, raspberries and blackberries make a good fool too!

I enjoy this dessert because we sometimes make a fool out of ourselves, when we eat it after a celebration or party or holiday.
