Mochi

My name is Laura Ishihara and I am a 6th grader at Manoa Elementary School. I am 11 years old and I live in Hawaii. My recipe is called Mochi and it is a recipe from Japan.

Ingredients~

5 cups of water
1 teaspoon of shoyu
1 teaspoon of salt
1 package ( approximately.
1 tablespoon) Shimaya brand dashi ( powdered soup stock) 2 daikon (Japanese radish)
2 carrots
Kamaboko (fish cake), Mizuna, and shingiku ( edible chrysanthemum leaves for garnish)

Directions~

Cut carrots and dikon into bite-size pieces, and bring to a boil, and set aside. Boil mochi until tender and set this aside, also. In a pot, mix together water, shoyu, salt, and dashi, and bring to a boil. In a soup bowl arrange to some daikon, carrots and mochi, then fill the bowl with broth. Then garnish with kamaboko, mizuna, and shingiku.

Summary~

Mochi soup originated in Japan, but my aunt created this mochi soup recipe. Mochi soup can be cooked everyday, but in Hawaii, it is usually cooked on New YearUs morning. Mochi soup is traditionally served with a toast of spiced sake before eating. Mochi soup tastes good, and its warm to the stomach. This soup makes me feel very happy.
