Swedish Strawberry cake!!
Basic cake:
4 eggs
2 dl suger
2 dl sifted all-purpose flour
Preheat oven to 200=B4C (400=B4F) Butter and flour three 23 cm cake
pans. Beat eggs and sugar until pale and thick. Stir in the flour ,mix well
Divide the butter in the cake pans. Bake for 7 to 9 minutes Invert the cakes
onto a wine rack lined with waxed paper. Let cool covered with a terry towel.
Filling and garnish:
1 liter strawberries sugar
4 dl wipping cream
Save the nicest strawberries for garnish. Mash the rest ,about one
half ,and mix with sugar to taste. Whip the cream stiff. Mix half of the cream
with the mashed berries. Put the cake layer togheter with the berry cream
between. Cover the entire cake with wipped cream and decorate with strawberries.
Chill before serving. You can eat it during the summer and when someone have a
birthday!!
