Vegetarian "Pytt i panna"
This Swedish dish is an excellent way of using left-overs. It is
suitable as lunch or as a late night dish at the end of a party (but without
using left-overs).
Ingredients:
8-10 medium-sized potatoes
2 onions
200 g mushrooms
2 dl textured soy
salt and pepper
Instructions:
Peel and finely dice the potatoes. Peel and chop the onion. Cut the
mushrooms in pieces. Fry the mushrooms and the textured soy. Then fry the
onions. Remove to a side dish. Thereafter fry the potatoes and add the other
ingredients. Serve with fried eggs.
