Vegetarian Pea Soup
This is a Swedish pea soup which often is served on Thursdays,
before pancakes. This recipe is a vegetarian pea soup. The original soup also
contains pork.
For soaking:
4 dl dried yellow peas
1.5 l water
1 tablespoon salt
For cooking:
1 l water
2 onions
2 carrots
Instructions:
Rinse the peas and let soak for 12 hours. Drain. Add 1 litre of water
with salt. Also add the chopped onions and grated carrots. Cover and let simmer
for 60 to 90 minutes, until yhe peas are tender. Remove the shells floating on
the surface. Season with sal, thyme or majoram.
