MINCED LARD FRYED LIVER BLOOD SAUSAGES SOUR TURNIP COMPICA
I
choose to represent a meal from a small village in Slovenia called Podkoren. In
the old days people were poor. They didn't have enough money to buy meat so they
ate meat only once a year. They stabbed a pig after the first snow fell. Then
they prepare a lot of different meals. But around 6th December they made frayed
liver, blood sausages, sour turnip, Compica ( a meal made of pressed potatoes ),
. All these meals were greased with minced lard. A lot of these meals they
prepared in their own way. Gorenjska ( part of Slovenia, Podkoren is in
Slovenia) was in the old days connected only with Koro¹ka ( part of
Slovenia and Austria ). So the people in Koro¹ka could prepare these meals
to.
MINCED LARD ( use it as a grease )
Ingredients :
? Bacon
? Salt and pepper
? Garlic
Instructions :
Slice the bacon into a little pieces, 15x15cm. Cook them in boiling
water for a few minutes. Take the bacon out of the water and wait till the bacon
is cold. Grind the bacon and spice it with salt and pepper and minced garlic.
Stuff the bacon into DREZA ( a coop made of wood ). Put the minced lard in a
cold place and that's it.
FRYED LIVER : ( first they ate liver )
Ingredients :
? Fresh pig liver
? Fat
? Few onions
? Salt and pepper
Instructions :
Fry the onions on fat, till they are shiny gold. Slice the liver on
skinny leaves. Fry the liver on the onions and put in a bit of salt and pepper.
The liver is ready.
BLOOD SAUSAGES : ( in Podkoren they prepare special blood
sausages )
Ingredients :
? Blood
? Barley-grouts
? Marjoram
? Salt and pepper
? Ground mint
Instructions :
Cook the barley-grouts and grease them with onions with minced lard.
Spice all the ingredients with marjoram, salt and pepper and ground mint. Add
the blood and mix all the ingredients with fork. Put all the ingredients into
grunt. Fry the sausages on the oil.
SOUR TURNIP ( eat sour turnip as supplement )
Ingredients:
? Flour
? Minced lard
? Sour turnip
Instructions :
Cook the turnip in water with salt. Grease it with minced lard. Make a
strait made of flour and a bit of water. Sour it in a pan and put the turnip on
the top. Fry the turnip for a few minutes.
COMPICA ( pressed potatoes - not mashed potatoes )
Ingredients :
? Potatoes
? Minced lard
? Salt
Instructions :
Cook the potatoes in the salt water. Press them just a little with a
fork. Grease the potatoes with minced lard.
