BARLEY-GRUEL with SMOKED PORK
Ingredients :
30 dag peeled barley
30 dag smoked pork
1 handful bean
2 potatoes
1 carrot
1 tomato
parsley
laurel
garlic
salt and pepper
Instructions :
Put the selected and well washed, peeled barley and beans into a dish
with some water for 12 hours. The next day put this on the kitchen-rang with a
laurel. After 20 minutes add the sliced meat, the clean carrot, the potatoes and
the parsley. Boil this for 1hour and a half. Then add some salt and pepper and
some garlic. And at the end put in some tomatoes. We served that with black rye
bread, like in old times. But now we can serve it with compote.
Background :
This is an old and simple meal. At the time when the farmer's family
put the pork in smoke, barley-gruel was on the table all the time. It was very
famous and festive. They cooked barley-gruel very seldom, only when they put
meat in smoke. This meal is special for village, called Krasci. People in this
village were very poor, so they got only a small piece of meat from the rich
farmers. So they could cook this, because for this meal you just need a small
piece of pork.
