FESTIVAL BREAD FROM OLD TIMES

My name is Ursa Ticar and I am in 8th class at Maks Pecar Elementary School. I am 13 years old and I live in Crnuce in Slovenia.

Ingredients:

- 500 g black flour
- 25g leaven
- 1/4 l milk
- 50 g butter
- salt
- ground white pepper
- nutmeg
- ground coriander

- by one bunch:
--- parsley
--- chervil
--- chive
- 2 spoons of sweet cream
- 1 little spoon of sugar
- 3 spoons of sesame seeds

Instructions:

1. Sift flour in a bowl and make a hollow.
2. Crumble leaven in a small pot with some tepid milk and leave it to rise.
3. Pour the leaven in the hollow in the flour.
4. Mix it with leftover milk, shook butter, spices and tiny chopped herbs.
5. Knead the mixture for 10 minutes, then put it on warm and let it rise for one hour.
6. Form 2/3 of the risen dough in three 40 cm long rolls, from 1/3 of it form three 30 cm long rolls.
7. Braid two sinews and put the small one on the longer.
8. Wet the ends of sinews and roll them in a wreath.
9. Put the wreath on a greased baking tin and leave it rise for one hour.
10. Smear the wreath with the mixture of sweet cream and sugar and sprinkle it with sesame seeds.
11. Bake for about 45 minutes by 180 degrees.
12. Cool the bread and put some Easter eggs in the middle.

Background:

This is an old European meal. People know it in all countries. People make it for Easter. It is made of black flour, although we eat white bread at festivals.
