I really enjoy this dish whenever my family goes out to eat in the local stalls. My sister orders 15 or 20 sticks of satay. Satay is very difficult to make so we prefer to eat it only when we go out of the house. Everybody out there please try this satay; it is very yummy.

INGREDIENTS:

Meat Preparation
A.
10 shallots
2 cloves garlic
1/4 thumb sized piece of tumeric or 1/2 teas tumeric powder
2 stalks of lemon grass
2 slices galangal

B.
2 tabs coriander seeds
2 teas cumin

C.
1 teas dark soya sauce
1 teas salt
4-5 tabs sugar
4 tabs oil

D.
455 g (1 lb) beef, chilled and cut into thin pieces

INSTRUCTIONS:

Pound {A} into a smooth paste. Fry {B} over low heat for 5 minutes, till fragrant. Pound to a fine powder while still hot. Mix {C} in a bowl and add to pounded paste from step 1.

Rub paste mixture into the beef. Sprinkle the coriander and cumin powder over the beef and mix thoroughly. Marinate beef for 1 hour. Thread seasoned meat on to satay sticks or fine metal skewers. Frill over charcoal fire or under hot grill. Baste with oil and water mixture to keep beef moist.

PEANUT SAUCE:

INGREDIENTS:

15 shallots
8 cloves garlic
2 stalks lemon grass
20-30 dried chillies
4 thin slices of galangal

F.
2 tabs salt
8-10 tabs flour
4 tabs lime juice

G.
455 g (16 oz) freshly roasted ground peanuts
225 ml (8 fl oz) oil

INSTRUCTIONS:

Pound {F} to a fine paste. Boil pounded peanuts with 900 ml (32 fl oz) water over low heat till thick. tir constantly for about 1/2 hour. Set aside.

Heat oil in wok and fry pounded paste (step 1) till fragrant and oil seeps through the paste.

Add paste to peanut mixture. Add {F}. Boil sauce over a low heat for 5-7 minutes till sugar is dissolved, stirring constantly. Cool peanut sauce and serve separately with barbecued beef and garnish.
