This is a recipe to make a soup which I have enjoyed very much and maybe you will. It is a nutritious soup made by Vietnamese and also takes patience to make. It is called Red Soup because it uses a large amount of carrot and tomato juice.

INGREDIENTS:

A.
3 cups carrot juice
1/2 kg tomatoes
1/2 cup dried shrimps
200g shrimp paste
1 bunch spring onions
1/4 cup fresh lemon juice
1/2 cup tamarind juice
200 g tofu (optional)
1 cup fresh shelled deveined shrimp (optional)

INSTRUCTIONS:

Boil one litre of water in a large pot. Add carrot juice and tomato. Grind dry shrimp and sauté it together with the shrimp paste. Add this to the soup;.

Ad tofu and shrimp if desired. Put boiled white noodles (bhun) into a serving bowl. Add fish sauce and lemon juice to taste. Pour soup over noodles.

Garnish with chopped onions and tofu.
