Yum Yum Cakes
Again an adult research volunteer to Diane Chiang's class in
Malaysia. -----------------------------------------------------------------
Hi I just loved Nicholas' story about being a page-boy! I've just
moved back to England (my home country) after eight years in Holland and
Belgium, so I'm spending a lot of time eating all those yummy things you just
can't get abroad. I was going to send you my recipe for stuffed marrow, but I
don't know if you can get vegetable marrows in Malaysia. Then I thought I'd send
you a cake recipe, because English people are famous for afternoon tea and
little cakes;)
This recipe comes from my mum, who was a cookery teacher and a
qualified baker and confectioner. These are simple cakes which anyone can make,
but she also makes spectacular wedding and birthday cakes. She makes special
Disney-type birthday cakes for my sister's kids and once even went down to the
local cinema to ask if she could trace one of their posters to use as a
template;) If I can find a photo of one of her cakes I'll scan it for you.
Anyway, here's the recipe (all the measurements are in ounces, but 1
ounce = 28 grammes):
Yum Yum Cakes
Base ----
2oz brown sugar
3oz margarine
2 egg yolks
6 oz self-raising flour
1 teaspoon vanilla essence
Topping -------
2 egg whites
4oz cater sugar
1oz chopped walnuts
1oz chopped cherries
Method ------
Mix margarine & sugar, add egg yolks and vanilla essence, add
flour. Mix it all up together. Roll out until it's about 1/4 inch thick, cut it
in half and press it into 2 rectangular baking tins (like a swiss-roll tin).
Topping: Whisk egg whites, add cherries, nuts and sugar, spread on top
of the base and cook for 25 minutes at gas mark 4.
