Kozai's Famous Stuffed Cabbage

My name is Keith Kozai and I am a 6th grader at Manoa Elementary School. I am 11 years old and I live in Hawaii. My recipe is called Kozai's Famous Stuffed Cabbage and it is a recipe from my Kozai grandma.

1-1/2 lbs. lean ground beef
1-1/2 tsp. salt 1/2 round onion,
chopped 1 egg 1/2 tsp.
black pepper
1/3 cup cooked rice
1/4 cup ketchup
1 medium head of cabbage
1 can CampbellUs tomato soup
1 tsp. Italian seasoning

Mix together ground beef, salt, onion, egg, pepper, rice and ketchup. Form into balls about 1-1/2 inches in diameter. Set aside.

Cut out the core of the cabbage. Place the head of cabbage in a pot with about 1/2 inch of water in it. Cover and par boil for about 5 minutes, or until the leaves can be peeled apart and folded without cracking. Remove from water, run under cold water, drain and cool.

Peel off enough leaves to wrap the ground beef balls. Wrap each ground beef ball in one cabbage leaf and secure with a toothpick. Cut remaining head of cabbage into quarters.

Place stuffed cabbage and cabbage quarters into a large pot. Pour one can of tomato soup and 1/3 can of water over the stuffed cabbage. Add the Italian seasoning and cook over medium heat until the soup starts to boil. Reduce heat and simmer for 1 hour.

This recipe has been handed down from my Kozai Grandma and is one of the few foods that my whole family likes to eat. It tastes even better as leftovers when the stuffed cabbage has soaked up the sauce. It tastes best on a plate with hot steamed rice . . . mmm, mmm, good!
