Jamaican Rice & Peas

2 cups rice
3/4 can coconut milk
1/2 cup cooked red kidney beans
Thyme to Flavor
3/4 cup water
1/2 cup water from cooked peas (beans)

Instructions ~

Begin cooking the rice with 3/4 cup water and 1/2 cup water from cooked peas. When water is absorbed, add cooked peas and slowly add coconut milk while gently stirring rice and pea combination. Add a few pinches of Thyme to flavor. Reduce heat to medium low and cover. Cook until rice is tender.

Summary ~

This recipe originated in Jamaica and is a traditional family dish. This dish is seved at dinner with chicken and served at any time, once in a while.

This dish is special to me because my dad ate it when he was a child. The flavors tasts a little coconutty. When I eat this dish, it makes me feel full.
