The second course of dinner 窶・FISH
STEWED IN SOUR CREAM
Up to the 19th century Russian second course dishes made of meat were rather
plain. But fish dishes were more interesting and diverse. Besides it is the Lent
here. The Orthodox Church is rather strict with it (if a person is an Orthodox
Christian). So we decided to offer you a kind of stewed fish. Enjoy it!
4 pieces of perch or crucian, 2 or 3 onions, 50 g of butter or olive oil, 1,5
glass of sour cream, 2 tablespoon of flour.
Scale the fish, rub some salt, coat in flour and put on a hot frying pan with
lard and onion. Fry the fish a bit on both sides then place it into an oven
dish, grease with sour cream and put into the oven. When it started turning
brown, grease the fish again with sour cream and put back into the oven. For 5
minutes put a lid on the oven dish, then remove and let it stew for 25-30
minutes. Serve in the oven dish.
