Cappelletti 

 

Ingredients:     

minced BEEF meat               

Onion                           

seller                          

oil                               

butter                          

cheese                        

ham                              

mortadella                   

nut-meg                      

flour                            

eggs                             

INGREDIENTS FOR “THE PESTO”:

200 g MINCED MEAT, ½ ONION, SELLER, OLIVE OIL, BUTTER, CHEESE, 150 g HAM, 100 g MORTADELLA, 1 NUT-MEG.

INGREDIENTS FOR THE DOUGH (for 6 persons):

400 g FLOUR,  4 EGGS, SALT.

DIRECTIONS:

WHEN THE MEAT IS COOKED, YOU SHOULD PRESS IT, POUR THE GRATED BREAD IN A TURREEN AND THEN MIX IT WITH THE MEAT AND STIR IT WELL. THEN ADD A LITTLE BROTH IF IT’S TOO DRY. ADD THE PARMESAN CHEESE, THE HAM, THE SALT AND THE NUT-MEG.

PREPARE THE DOUGH WITH THE FLOUR AND THE EGGS. THEN LAY THE DOUGH AND MAKE THE CAPPELLETTI CUTTING SOME STRIPES AND THEN LITTLE SQUARES.

ON THESE LITTLE SQUARES PUT A LITTLE PESTO (LIKE A LITTLE BALL) AND THEN MAKE THE CAPPELLETTI. THEIR SHAPE IS LIKE A LITTE HAT.

THEN COOK THEM IN THE MEAT BROTH AND THEN SPRINKLE IT WITH GRATED PARMESAN CHEESE.

SERVE THEM HOT.
